Waffles (grain free)

Waffles are great for breakfast, lunch and dinner.

Grain Free Waffles

½ Cup butter
1 Cup kefir (or coconut milk with 1 tablespoon lemon juice or vinegar)
3 eggs
1 ½  C almond Flour
2 T coconut flour
1 tsp baking soda
½ tsp salt

Melt butter.  Heat waffle iron. .  Place remaining ingredients in a blender and blend.  Add melted butter and blend until smooth. Grease the waffle iron very well.  Pour some batter into the bottom of the waffle iron, but don’t put enough to go all the way to the edges – it will spread.  If you have a large waffle maker that makes 4 squares, it might take 3/4 cup.  If you have the smaller round ones, try 1/2 cup. Cook until steam is done escaping (or follow manufacturers directions).  Remove from waffle iron and spread on plenty of butter.

Note: Batter thickens as it sits.  Add a bit more kefir if needed.  As with most almond flour recipes, these waffles will stick more than typical waffles.  Grease liberally.

Serving suggestion, Top with Apple Chutney and a dollop of Creamy Yogurt Cheese. I love these for sandwiches.
