Here is another coconut oil “cream”, which does seem a bit candy-like. It is one of my favorites. Chocolate extract can be a bit expensive. These can be made without it, but of course then they would only be Minty Creams. These are an easy way to get coconut oil into the diet. If you make this batch into 16 creams, each one will have 1/2 tablespoon of coconut oil, but the coconut milk is over 90% fat, so each cream will have almost a tablespoon of coconut fat.
If your diet allows honey, a tablespoon or so of honey will make these even more “candy”-like, but either way, these are a very pleasant way to take coconut oil. They also seem to be easier on the stomach. Sometimes people have trouble with coconut oil feeling uncomfortable on the stomach. Swedish Bitters are suggested to help that. However, we have found that these creams seem to not have as much of that effect. I speculate that it is because they are frozen and take a bit of time to thaw so the stomach is only dealing with a small amount at a time. This could be all in the imagination, but at any rate, these are a great way to get oil into the diet.
½ cup coconut oil (solid)
¼ cup butter
¼ cup coconut cream (from the top of coconut milk)
½ teaspoons whole (green) stevia
1/2 – 1 1/2 teaspoon mint extract
2 teaspoons chocolate extract
In a mixer, beat coconut oil, butter and coconut cream. Do not over beat. Add stevia and extracts and mix just until blended. Drop by tablespoons into 16 mounds on parchment covered baking sheet (or make them larger or smaller as desired). Flatten each mound (thicker creams are harder to bite). Place in freezer for 15 minutes to harden. Store in a covered container in the freezer.
