Strawberry Mousse

This is a favorite of Bryan’s.  He would eat a whole recipe if  he could.  I like using frozen berries because it sets the gelatin faster, but then you have to be careful to get the gelatin all blended in quickly so it doesn’t make lumps.

Makes about 6 cups

2 packages (or scant 2 tablespoons ) unsweetened/unflavored gelatin
¼ cup water
1 can coconut milk
1 cup creamy yogurt cheese
3 cups fresh or frozen strawberries
2 teaspoons green stevia
2 teaspoons vanilla
Soften gelatin in water in a small saucepan for 5 minutes. Place on stove at medium heat until dissolved.  Meanwhile, blend yogurt, fruit, stevia and vanilla in a blender until smooth.  Add yogurt cheese.  When all is smooth, add dissolved gelatin to the blender and pour into a gelatin mold or glass bowl.  Chill until firm.
